Balsamic Onions

Small brown onions, slowly roasted till caramelised with balsamic vinegar.


This is a simple yet wonderful side dish my mum used to make often. Choose a good quality, syrupy balsamic vinegar and small onions. Be patient, and bake them at low temperature for nearly two hours. You won't regret it.


Ingredients (for 4)

  • 4 brown onions, small, sliced in half

  • 4 tbsp extra virgin olive oil

  • 3 tbsp good quality balsamic vinegar

  • Fresh thyme or parsley

  • Salt and pepper to taste

Method


Arrange the onions, cut side down, in a pyrex or baking tray, season with all other ingredients and cover in aluminium foil.


Bake in the oven at 180°C for 1 hour. Remove the foil, turn them over and bake for another 40 minutes to one hour. Check with a fork - they are done when they are very tender.
