Broccoli alle Olive
I've had this recipe on the back burner for a while, feeling it may be a bit too simple to be worth sharing but honestly it's so delicious that I had to.
This is how my paternal grandmother used to make broccoli. All you need is really a handful of ingredients:
Broccoli 1, cut into florets
Black olives 20, pitted
Garlic 2 cloves, minced
Pine nuts 1 tbsp
Red chillies 2, chopped finely
Olive oil 2 tbsp
Vinegar 1 tbsp
Salt to taste
Heat the oil and fry the garlic. Add the broccoli, salt, chillies and cook, lid on, until the florets are almost fork-tender.
Add the vinegar, increase the heat for 30 second to let it evaporate. Lower the flame again and add the olives and pine nuts. Cook until the broccoli are fully done.
Serve hot or at room temperature as a side dish, or use as a condiment for pasta.
