Broccoli alle Olive

Vegan Sicilian Sautéed Broccoli & Black Olives


This quick, easy and delicious stir-fry is perfect for a healthy start of the week. Works great as a side dish but can be a good main course as well added to brown rice or your favourite grain.


This is how my paternal grandmother used to make broccoli. All you need is really a handful of ingredients and 15 minutes.



Ingredients (for 4 as a side dish)

  • Broccoli 1, cut into florets

  • Black olives 20, pitted

  • Garlic 2 cloves, minced

  • Pine nuts 1 tbsp

  • Red chillies 2, chopped finely

  • Olive oil 2 tbsp

  • Vinegar 1 tbsp

  • Salt to taste


Method


Heat the oil and fry the garlic. Add the broccoli, salt, chillies and cook, lid on, until the florets are almost fork-tender.


Add the vinegar, increase the heat for 30 second to let it evaporate. Lower the flame again and add the olives and pine nuts. Cook until the broccoli are fully done.


Serve hot or at room temperature as a side dish, or use as a condiment for pasta.
